Not Blogging But Still In The Kitchen

Hello my friends!

Don’t you worry, even though I have not been blogging, I HAVE been in the kitchen.

Life, as always has stayed busy but a girl and her Mister still have to eat.

The week before Easter, the week of Easter and the week after Easter, I didn’t do much cooking at all. It’s one of the busiest seasons in ministry and so we ate out a lot. I hate when we do it too because it takes the biggest toll on our bank account.

Nonetheless, we are back to brown bagging and cooking which makes my heart and wallet smile really big!

Here are some pictures of what I’ve been cooking up.


I love roasting cherry tomatoes because of the way they burst with flavor after they are done. I mixed them with some roasted asparagus tips and zucchini with yellow squash. Then, I sprinkled some shredded Parmesan over it all. I didn’t get a picture of the final product but I promise that it looked absolutely delicious.

I love roasting asparagus and then just eating it with my hands. Who needs a fork? Great finger food in my opinion!


Being that today is Cinco De Mayo I decided that I wanted to make something appropriate but not too unhealthy for dinner. The worst part of this meal is the flautas because they are from a box but the rest of the meal is pretty fresh! 

This week is the Mister’s birthday week so there will be plenty to share all about it soon. Excitement is looming!

P.S. For those of you wondering how the mission trip fundraising is going…God has provided every penny that we need for the trip. It has been so amazing and humbling to watch Him do this. Please pray for us as we prepare to GO.
